OMG... I can't tell you how moist and delicious these muffins are! The addition of kefir makes them extra soft and melt-in-the-mouth. They're also gluten and refined sugar free. My kids simply love this recipe!

Ingredients
1 1/4 cups of almond meal 1 cup Oats 1/2 cup maple syrup 1 tsp cinnamon 1/4 tsp allspice 1/4 tsp nutmeg 1 Tbsp baking powder 1/2 tsp salt 1 tsp vanilla 1 cup Table of Plenty Probiotic Kefir 1/4 cup coconut oil 2 eggs 1 1/2 cups zucchini, grated (from about 1 medium zucchini) 1/3 cup dark sugar free mini chocolate chips
Method
Preheat oven to 180. Grease the muffin tin. Grate the zucchini over a dish towel and squeeze to remove water.
Combine the dry ingredients in a small-medium sized mixing bowl. Combine the wet ingredients in a large mixing bowl. Whisk until well combined. Gradually, add the dry ingredients to the wet ingredients. Fold in the zucchini and chocolate chips. Fill the muffin tins about 3/4 full. Bake for 10-15 minutes. Check at 10 minutes to see if fork comes out clean.
